Raw Red Pepper Soup

This weekend, we’re including a recipe for an easy to prepare raw soup that is both healthy and delicious. Even if you're not a big red pepper fan, we think you’ll like this soup! It is sweet, creamy, and rich. A great soup to boost your immunity, as it is full of antioxidants, vitamin C and vitamin A, with the added benefits of raw garlic. One medium red bell pepper contains more than twice your daily recommended intake of vitamin C and nearly all the vitamin B6 you need in a day.


5 large red bell peppers

1 cup of raw cashews

1 cup coconut milk

1/4 cup onion

1 large garlic clove

1 tsp Himalayan salt, add more to taste

½ tsp black pepper, add more to taste


Wash, remove seeds and cut bell peppers in quarters and place in blender or Vitamix. Rinse cashews well and add to the blender. Add the coconut milk, onion, and garlic. Blend until the soup is smooth, adding water to help it reach your desired consistency. Add a teaspoon of Himalayan salt and 1/2 teaspoon of black pepper. Blend again. Add additional salt and pepper to taste (more pepper gives it a nice kick). Serve at room temperature or chilled.
